4 chicken breasts, boned and skinned Butter Salt Orange juice Tabasco sauce Orange sections Currants Raisins Diced walnuts (optional) Rice pilaf Flatten the chicken breasts slightly. In a skillet heat a small amount of butter and cook the chicken breasts for about 5 minutes on each side. Salt lightly. Add orange juice to cover, and simmer for a few minutes. Add Tabasco sauce to taste, orange sections, currants, raisins, and walnuts as desired. Cover and simmer for about 25 minutes, until the chicken is tender. Check, and add more orange juice if needed. Serve with rice pilaf. Serves 4. |
