CHICKEN SUDADO
 

1 whole chicken cut up or
6 chicken breasts
l large onion (chunked)
l large tomato (chunked)
1 1/2 T. ground cumin (comino)
2 T. salt
2 1/2 T. garlic powder
1/4 cup safflower oil
3 T. safflower oil
Approximately 4 cups of warm water.

Sweating Chicken (Chicken Sudado)

Sautee onion & tomato until translucent and softened. Set aside in a bowl.

Add chicken pieces to pot with 3 T. oil. Sprinkle salt, garlic powder & ground cumin over chicken. Add sauteed tomato & onion on top of the chicken. Add approximately 4 Cups of water (level with top of the chicken), NOT ABOVE. This must sautee in juices & ingredients, NOT BOIL in excess water. Sautee for approximately 35-45 minutes on medium heat until sauce thickens.

Add potatoes on top of mixture after it begins to sautee. Check bottom of pot and chicken to insure no sticking.

Reduce temperature as necessary to finish sauteeing.

You may use this over rice if you do not use the potatoes as a side dish.
