POTATO SOUP
 

6 med. potatoes, thinly sliced
1 bunch leeks (white parts only), thinly sliced (about 2 c.) optional
1/2 c. thinly sliced celery
1 c. thinly shredded carrots
1 c. thinly sliced onions
1 pkg. frozen broccoli
3 c. water
2 tsp. salt
1/4 tsp. pepper
1 (13 oz.) can chicken broth
2 c. half and half (may use skim milk or diluted evaporated milk
Chopped chives

Cook first nine ingredients until very tender. Just before serving add broth, milk, chives. Reheat but DO NOT BOIL after milk has been added. Can add cheese soup or Cheez Whiz if desired. This was always a family favorite.
