POTATO DUMPLINGS
 

2 c. boiled potatoes, mashed
3/4 to 1 c. flour
1 egg, beaten
1 tbsp. onion powder (optional)
Salt and pepper to taste

Amount depends upon how "stiff" you want the dumplings. It must be easily formed into dumplings without being sticky.

Mix all ingredients well. Shape into dumplings. Not too large. Drop into rapidly boiling water. Salt may be added to the boiling water, if desired. Cook 4 to 5 minutes, stirring occasionally. Drain. Serve with melted butter, butter, gravy, or plain yogurt.
