2 c. sifted flour 1 1/2 tsp. soda 1/2 tsp. cloves 1 tsp. salt 1 1/2 tsp. cinnamon 1 tsp. nutmeg 2 c. sugar 1 1/4 c. cooking oil 4 eggs 2 tsp. vanilla 2 c. mashed sweet potatoes 1/2 c. chopped pecans Re-sift flour together with soda, cloves, salt, cinnamon and nutmeg. Into mixing bowl combine sugar and cooking oil and mix thoroughly. Add eggs one at a time; mix and add vanilla. Add dry ingredients, mashed cooked sweet potatoes, and pecans. Mix thoroughly. Bake in greased tube or Bundt pan for 1 hour 15 minutes. Let cool. FILLING: 1/2 stick butter 1 (3 oz.) pkg. cream cheese 1/2 tsp. vanilla 1/2 c. nuts 1/2 box powdered sugar Mix ingredients together. Slit cake horizontally and put filling between sections. Sprinkle powdered sugar on top of cake. Serves 20. |
