APPLE PIE FILLING
 

Peel & slice 1 bushel of apples
4 1/2 c. sugar
1 c. cornstarch
2 tsp. cinnamon
1/4 tsp. nutmeg
1 tsp. salt
10 c. water
3 tbsp. lemon juice

Mix all ingredients except apples to make a syrup. Cook until thick and bubbly. Add the three tablespoons lemon juice. Fill jars with apples. Pour syrup over apples. Tightly cover jars with clean lids. Water bath for 20 minutes. You may also freeze this filling. Put apple slices in container or freezer bag and cover with syrup. Freeze.
