4 c. rhubarb, cut in 1-inch pieces 3/4 c. sugar 1 pkg. strawberry Jello Mix above 3 ingredients together. Add: Bring to a boil. Cook and stir about a minute. Add: Pour into 8-inch pan. Dot with 1 1/2 tablespoon butter. Add Cobbler Topping to hot Strawberry and Rhubarb filling. Bake in 400 degree oven for 20 minutes or until crust is brown. COBBLER TOPPING: 1 c. flour 1 tbsp. sugar 1 1/2 tsp. baking powder 1/4 tsp. salt Mix together. Cut in 1/4 cup butter until mixture resembles coarse crumbs. Mix 1/4 cup milk and 1 slightly beaten egg. Add all at once to dry ingredients. Stir just to moisten. Drop by spoonfuls on hot Strawberry and Rhubarb mixture. Bake as directed. Serve with cream or vanilla ice cream. |
