APPLE CRISP WITH TOFU WHIPPED CREAM
 

Approx. 6 apples, cored & sliced thinly
1 c. rolled oats
1/2 c. honey
1 tsp. ground cinnamon
1/4 c. soy oil or melted soy butter
Apple juice, cider or water
Tofu Whipped cream (opt.)

Preheat oven to 375 degrees. Fill 2 quart baking dish with sliced apples. Mix together oats, honey, cinnamon and oil or butter. Crumble over top of apples. Pour in enough apple juice, cider or water to cover bottom of baking dish. Bake 30 minutes. Top each serving with Tofu Whipped Cream, if desired. Serves 4 to 6.

TOFU WHIPPED CREAM:

2 c. tofu
1/2 c. soy sauce
1/3 c. + 2 tbsp. honey
1 1/4 tsp. alcohol free vanilla extract
4 tbsp. soy milk

Blend all ingredients together in a blender until smooth. Pour into bowl, cover, and chill for 1 hour or overnight before serving. This is an excellent non dairy topping. Makes approximately 3 cups.
