ELDERBERRY PIE
 

3 c. stemmed Elderberrys
1/2 c. sugar
1/8 tsp. salt
2 tbsp. flour
3 tbsp. lemon juice

Toss berries with sugar, salt and flour.

Make crust for 2 crust pie. Fill pie with berries than sprinkle lemon juice, top with crust and flute edges. Cut a few slits on top. Bake in preheated 450 degree oven for 10 minutes. Reduce heat to moderate 350 degree oven and bake for about 30 minutes.
