3/4 c. sugar 1/4 c. all-purpose flour 1/2 tsp. ground nutmeg 1/2 tsp. ground cinnamon Dash of salt 6 c. thinly sliced apples 2 tbsp. butter Heat oven to 425 degrees. Prepare pastry. Mix sugar, flour, nutmeg, cinnamon and salt. Stir in apples. Turn into pastry-lined pie plate; dot with butter. Cover with top crust that has slits in it; seal. Cover edge with 3 inch strip of aluminum foil; remove foil during last 15 minutes of baking. Bake until crust is brown and juice begins to bubble through slits in crust, 40 to 50 minutes. OIL PASTRY 9 INCH PIE CRUST: 1 c. plus 2 tbsp. all-purpose flour 1/3 c. vegetable oil 1/2 tsp. salt 2 to 3 tbsp. cold water Mix flour, oil and salt until particles are the size of a small pea. Sprinkle in water, 1 tablespoon at a time, mixing until all flour is moistened and pastry almost cleans side of bowl. |
