AUTHENTIC KEY LIME PIE
 

3 c. (two 15 oz. cans) Eagle brand sweetened condensed milk
1 1/2 c. lime juice, plus 6 tbsp. lime juice
2 drops of green food coloring if desired
1 1/2 tsp. freshly grated lime peel
6 egg yolks (reserve whites)
1/2 tsp. cream of tartar
1/2 c. sugar

Preheat oven to 325 degrees. Mix well all ingredients up to egg yolks and pour into 2 (9 inch) deep dish, prebaked crumb crust or pastry shells. Prepare meringue topping by whipping egg whites to soft peaks. Gradually add cream of tartar and sugar. Pile onto fillings, sealing edges of topping to the crust. Bake for approximately 15 minutes or until brown. Cool 2 to 3 hours before cutting with sharp knife dipped in hot water.
