SPICY BEET PICKLES
 

2 c. sugar
2 c. water
2 c. 5% vinegar
1 tsp. cloves
1 tsp. allspice
1 tbsp. cinnamon
1-1 1/2 gal. beets

Cook the beets until tender. Dip them in cold water to slip the skins. Make a syrup of the above ingredients. Pour syrup over sliced, quartered or whole beets and boil 10 minutes. Pack into sterilized jars. Add syrup and seal. Process for 30 minutes in water bath.
