2 gal. cut cucumbers 1 pt. pickling salt 1 gal. boiling water 2ND DAY: 1/4 tsp. sulfate 1 gal. boiling water 3RD DAY: 2 tbsp. alum 1 gal. boiling water 4TH DAY: 1 qt. white vinegar 2 qts. sugar 2 to 3 sticks cinnamon 2 tbsp. mix pickling spice 1st Day: Soak in above ingredients 24 hours. 2nd Day: Rinse and soak 24 hours in sulfate and water. 3rd Day: Rinse and soak 24 hours in alum water. 4th Day: Make syrup of vinegar, sugar, cinnamon sticks and pickling spice. Boil. Pack cucumbers in jars. Pour hot syrup over and seal. Hot pack quarts 10 minutes. |
