3 1/2 lbs. prepared zucchini 4 c. vinegar 4 c. sugar 1 c. pickling lime 1/2 gallon water 2 tsp. celery salt 2 tsp. salt 2 tsp. pickling spices, tied in a bag 5 to 6 drops food coloring Wash and cut off zucchini. Cut into 1 inch slices and remove center pulp and seeds. Cut slices in cubes or dice them. Mix lime and water in crock. Add zucchini cubes; let stand 24 hours, stirring frequently. Cover with cloth. Next day, rinse until clear; drain. Mix vinegar, sugar, salt, celery salt, pickling spices, and food coloring. Bring to boil; add zucchini cubes. Simmer about 45 minutes. Pack in hot jars and seal. |
