SPINACH LASAGNA
 

1 (15 1/2 oz.) jar spaghetti sauce
2 (14 oz.) cans spinach
1/8 tsp. ground nutmeg
1 1/2 c. low-fat cottage cheese
1 beaten egg
5 tbsp. grated Parmesan cheese
9 lasagna noodles
Vegetable cooking spray
1/2 c. (approximately 2 oz.) shredded mozzarella

Place spinach on a paper towel and squeeze until barely moist. Sprinkle with nutmeg. Combine cottage cheese, egg and 3 tablespoons Parmesan cheese in bowl. Cook lasagna according to package. Coat a 12 x 8 x 2 inch baking pan with cooking spray. Lay 3 lasagna noodles in pan. Spoon on spaghetti sauce. Top with cottage cheese mixture, repeat layer of noodles and cover with spinach. Top with noodles and cover. Bake at 350 degrees for 40 minutes. Sprinkle with mozzarella and remaining Parmesan cheese and bake for 5 more minutes.
