1/2 c. milk 1/2 c. chicken broth 1 pkg. (10 oz.) chopped spinach, thawed, well drained 1/2 c. chopped onion 2 garlic cloves, minced 2 tbsp. (1/4 stick) butter 1/3 c. (1 1/2 oz.) grated Parmesan cheese 1/4 tsp. pepper 8 oz. linguine, cooked, drained Place milk, broth and spinach in blender or food processor container fitted with steel blade, cover. Blend until smooth. Cook and stir onion and garlic in spread until tender. Add spinach mixture. Cook over low heat 5 minutes, stirring occasionally. Add cheese and pepper, stirring 1 minute or until slightly thickened. Pour over linguine, mix lightly. Makes 4 servings. |
