SPAGHETTI SHRIMP AND COURGETTES
 

mashed garlic
1 small onion
250 grams (approx 1/2 lb) shrimp
olive oil
white wine
1 courgette (zucchini) sliced into small cubes
basil, mint, parsley
1 cube vegetable or fish bullion
500 grams (approx 1 lb) pasta

Sauce:

Cook onion and garlic over low heat in a generous amount of olive oil. Mix in the cubed courgette (or zucchini). When vegetables are cooked, add white wine, basil, mint, parsley and a cube of fish stock. Mix in frozen shrimp.

Boil pasta, and when ready (al denté), mix sauce and serve.
