4-5 lbs. cooked & diced potatoes 3/4 c. chopped cucumber 1 lg. onion, chopped 1 1/2 c. Hellmann's mayonnaise 1-2 tsp. salt & pepper (to taste) 5-6 hard boiled eggs, diced Decorate with Paprika (opt.) Combine potatoes, cucumbers and onion. Chill for 2 hours. Then add salt and pepper, mayonnaise and eggs. Mix well. Sprinkle paprika on top and chill for another 2 hours. Serve and enjoy. |
