CHOW MEIN OR CHOP SUEY
 

1/4 c. butter
1 tsp. salt
1/16 tsp. pepper
1 can bean sprouts
1 1/2 c. hot water
2 c. cooked chicken or pork, cut into thin strips
1 c. onions, cut fine
2 c. celery, cut fine

Melt butter in skillet, add onions and fry 3 minutes. Add celery, salt, pepper and hot water. Cover and cook 5 minutes. Add drained bean sprouts and meat. Mix thoroughly; cook 5 minutes. Add the following mixture:

2 tbsp. cold water
1 tbsp. soy sauce
2 tbsp. cornstarch
1 tsp. sugar

Stir lightly. Cook 1 minute. Serve hot with fried noodles for chow mein or on rice for chop suey. Flavor servings with soy sauce.
