Sift 4 cups plain flour with 1 1/2 teaspoon salt, 1/2 teaspoon baking powder, 1 1/2 teaspoon cinnamon, and 1 teaspoon nutmeg. Add to the flour: 1 3/4 pound chopped candied pineapple, 3/4 pound whole candied green or red cherries, 4 cups chopped nuts, and 1 pound white raisins. Cream until fluffy: 2 sticks of butter and 2 1/4 cups sugar. Add 6 unbeaten eggs, one at a time. 1 ounce (2 tablespoons) rum flavoring.
Now add this to the fruit and flour. Mix well with hand. Line a tube pan with a double thickness of brown paper and grease well. Pack mixture well in pan. Cook at 260 degrees for 3 hours or until a light golden brown. Put a pan of water under it while cooking. When done and well cooled, take out of pan. Put a few spoons of favorite juice over it; apple, grape or orange.
