ANCHOVY GARLIC BUTTER FOR PASTA
 

1 can anchovy fillets
2 good sized garlic cloves (mashed)
4 tbsp. butter (must be butter)
2 tbsp. light olive oil
Pinch of crushed red pepper
Pinch of freshly ground black pepper

Mash anchovies with fork. Work in the mashed garlic and cold butter, making a paste. Place in bowl. Add olive oil and oil in anchovy can, red and black pepper. Mix well. Do not add salt as anchovies are salty. Do not cook or heat butter sauce, but just use as it is over freshly cooked spaghetti (1/2 package or 8 ounce). Add Parmesan cheese and serve with red wine and Italian bread. Simple but delicious! Serves 4.
