APPLE CRUMB CAKE
 

BATTER:

1/2 c. soft butter
2 eggs
2 tsp. vanilla
1 c. sugar
1 c. sour cream
2 c. sifted flour
1/4 tsp. baking powder
1 tsp. baking soda
1 tsp. salt

FILLING:

1 1/2 c. peeled, chopped apples (fresh peaches, plums, cherries or berries may also be used)
1 tsp. cinnamon
1/2 c. sugar
1/3 c. chopped pecans or walnuts (optional)

TOPPING:

1/4 c. softened butter
1/2 c. flour
1/2 c. Bisquick or pancake mix
1/3 c. sugar

1. Cream butter, sugar, eggs, sour cream and vanilla in large mixing bowl.

2. Sift together flour, baking powder, salt and baking soda.

3. Stir flour mixture into butter mixture and blend until smooth.

4. Combine apples, cinnamon and sugar in small bowl.

5. Spread half of the batter into lightly greased 9 inch square pan.

6. Top with apple mixture.

7. Spread remaining cake batter on top of apples.

8. In small bowl, blend butter, flours and sugar to make crumbs with pastry blender or large fork. Mixture should be crumbly.

9. Top cake with crumbs. Lightly dust crumbs with cinnamon.

10. Bake at 325 degrees for 45 minutes or until cake tests done with toothpick.
