COFFEE CRUMB CAKE
 

CRUMB TOPPING:

2 1/4 sticks butter
1/2 c. sugar
1 c. brown sugar
1 tsp. cinnamon
1/4 tsp. nutmeg
3 c. flour

CAKE:

2 c. flour
1/2 c. sugar
1 tsp. salt
1 tsp. baking powder
1 egg
1 tsp. vanilla
1 c. milk
1/3 c. vegetable oil

Preheat oven to 375 degrees. Grease 9x13inch pan.

CRUMB TOPPING: In a saucepan, melt butter and let cool. Stir in sugars, cinnamon, nutmeg and the 3 cups flour. Mix well with fork. Set aside.

CAKE: In mixing bowl, combine 2 cups flour with 1/2 cup sugar, salt and baking powder. In small bowl, whisk eggs with milk, vegetable oil and vanilla. Add liquid to dry ingredients. Batter should be lumpy. Pour batter into prepared pan. Scatter the readied crumbs over the top. Bake 35 minutes. Sprinkle with confectioners' sugar.
