SUNDAY NIGHT WAFFLES WITH CIDER SYRUP
 

2 eggs
1 1/2 c. milk
1/2 c. vegetable oil
2 c. flour
4 tbsp. cornmeal
4 tsp. baking powder
4 tsp. sugar
1/2 tsp. salt

Preheat waffle maker. Put all ingredients in a blender or beat with a wire whisk until dry ingredients are moistened. Serve family of four.

CIDER SYRUP:

1 c. sugar
2 tbsp. cornstarch
1/4 tsp. each cinnamon & nutmeg
2 c. apple cider
2 tbsp. lemon juice
1/4 c. butter

In a saucepan, mix sugar, cornstarch, cinnamon and nutmeg; stir in apple cider and lemon juice. Cook, stirring constantly until mixture thickens and boils. Boil and stir 1 minute. Remove from heat; stir in butter. Makes about 2 1/2 cups. Serve warm. Recipe can be made in large quantities during cider season and frozen.
