5 diced potatoes (about 3 1/2 c.) 1 med. onion, chopped 1/2 tsp. salt 1/4 tsp. pepper 1 tsp. sugar 1/2 lb. bacon, diced 1/3 c. apple cider vinegar 1 egg Cook potatoes with skins on them; when cold, peel and dice or slice. Cook bacon, then drain well on paper towel. Combine potatoes, bacon and onion. Add the rest to the bacon drippings and heat thoroughly. Pour over the potato mixture and mix well. Serves about 6. |
