4 to 6 lbs. brisket of beef 1 qt. beer or ale 6 peppercorns 2 bay leaves 1/2 tsp. thyme Peeled sm. white potatoes Sm. onions Carrots Wedges of green cabbage Simmer beef in the beer and seasonings over a lot heat for 4 hours or longer until meat is very tender. During last 30 minutes of cooking time, add vegetables. Continue cooking until vegetables are done. Serves 8. |
