ICELANDIC COD WITH SHRIMP SAUCE
 

Broil 1-2 pounds Icelandic Cod, that has been brushed with melted butter, 8 minutes each side if 1-inch thick.

Make a white sauce:

4 tbsp. butter
4 tbsp. flour
2 c. milk
1/8 tsp. salt
1/8 tsp. pepper

Melt butter over low heat in heavy saucepan. Stir with wooden spoon. Blend in flour and seasoning. Cook over low heat until bubbly and smooth. Remove from heat. Stir in milk. Bring to a boil, stirring constantly. Boil 1 minute. Makes 2 cups.

To white sauce add:

1 tbsp. grated onion
1 (4 oz.) can mushrooms (drained)
1 can prepared drained shrimp (frozen thawed OK)

Place broiled cod in glass baking dish. Pour white sauce mixture over. Bake in oven at 325 degrees until heated through and starts to bubble. Garnish with parsley.
