4 lean pork chops Salt and pepper to taste 2 tbsp. oil 2 tbsp. butter 1 c. raw rice 1/2 c. chopped bell pepper 1/2 c. chopped onion 2 3/4 c. chicken broth 1/4 tsp. thyme Brown seasoned pork chops in oil. Remove from skillet. In the same skillet, brown the raw rice in butter until it has a nutty color. Add the remaining ingredients and stir until blended. Place rice mixture in a 13 x 9 inch pan. Place pork chops on top. Cover with foil and bake at 350 degrees for one hour. Serves 4. |
