WEST INDIAN PORK ROAST
 

Pork roast
1 large onion
2 cloves garlic
2 stalks scallions
Salt and pepper
1/2 tsp. paprika
1/2 tsp. thyme
1/2 tsp. oregano

GRAVY:

Pork drippings
1/4 c. hot water
1/2 - 1 can stewed tomatoes
1 onion
Flour
Salt and pepper
2 tbsp. catsup
1/2 - 1 green pepper

Mix together onions, garlic, scallions, salt and pepper, paprika, thyme and oregano until it becomes a paste and stuff mixture into small slits through the pork roast.

Place pork roast in a covered casserole dish. Cook in a slow oven (approximately 350°F) for 3 hours.

Gravy: Pour off grease and use drippings. Place in a pan. Add a small amount of hot water, stewed tomatoes, onion, flour, catsup, green pepper and salt and pepper.
