NEW ENGLAND POT ROAST
 

2-3 lb. whole beef roast
6 carrots, cut in half
6-8 med. potatoes, cut in half
1 med. head cabbage

Put roast in Dutch oven with salt and pepper, 3 cups water and cook about 2 hours. Add more water, if needed. Put potatoes and carrots in beef. Cook about 40 minutes. Cut cabbage into 4 pieces. Place cabbage on top of roast. Steam cabbage 7-10 minutes.
