BAKED SPARERIBS AND KRAUT
 

3 lbs. pork spareribs
1 1/2 tsp. salt
1/2 tsp. pepper
1 qt. sauerkraut, undrained
2 tbsp. brown sugar
2 tart apples, peeled & sliced
1 onion, chopped
1/4 c. water
3 tsp. caraway seed (opt.)

Heat oven to 450 degrees. Cut ribs into serving pieces. Place in ungreased 13"x9" pan. Sprinkle with salt and pepper. Bake at 450 degrees for 20 minutes. Reduce oven temperature to 350 degrees. Remove ribs and drain fat from pan. In same pan, combine sauerkraut, brown sugar, apples, onion and water. Spread evenly in pan. Sprinkle with caraway seed if desired. Arrange ribs on top and bake for an additional 1 1/2 to 2 hours or until ribs are tender. Serve with mashed potatoes. 5 to 6 servings.
