4 oz. thinly sliced, fully cooked ham, chopped (1 c.) 3 slices bacon, snipped 1/4 c. chopped onion 2 tbsp. chopped pimiento green olives 1 clove garlic, minced 1 beaten egg 1 (4-5 lb.) boneless beef rib roast In bowl combine chopped ham, snipped bacon, onion, olives, garlic and beaten egg. Unroll roast spread ham mixture over meat. Re-roll roast; tie securely. Place roast, fat side up, on rack in shallow roasting pan. Roast, uncovered at 325 degrees for about 3 hours for rare, 4 hours for medium. Let stand about 15 minutes. Remove strings and carve. Makes 12 to 15 servings. |
