ROAST PORK TENDERLOIN
 

2 (1 1/4 lb.) strips fresh pork tenderloin
Thin slices fat, salt pork or bacon
1/2 c. soy sauce
1 tbsp. grated onion
1 clove garlic, crushed
1 tbsp. vinegar
1/4 tsp. cayenne pepper
1/2 tsp. sugar

Cover meat with the slices of fat; tie as for rolled beef roast. Mix remaining ingredients for sauce and brush on meat several hours before cooking and again before putting in oven. Roast uncovered at 300 degrees for about 1 3/4 hours. Baste frequently with sauce and juices from pan. When done, remove strings carefully, leaving on brown fat. Slice.
