KALBI GIYI BARBECUED BEEF SHORT RIBS
 

2 2/3 lbs. beef short ribs

SEASONING SAUCE FOR RIBS:

6 tbsp. soy sauce
3 tbsp. sugar
4 tbsp. minced green onion
2 tbsp. minced garlic
2 tbsp. sesame seed powder
2 tbsp. sesame oil
1/3 tsp. pepper
1/2 pear
1 green onion
2 hot green peppers

1. Ask meat man to cut beef short ribs into pieces, about 2 inches long.

2. Cut fat off top of ribs and pull off tough skin. Unfold meat on rib to right and left of center and make fine scores on ribs taking care not to cut through.

3. Mix ingredients except pear for seasoning sauce.

4. Peel pear, grate and add juice to sauce (3).

5. Cut green onion into 2 inch strips. Wash green peppers.

6. Dip short ribs into seasoning sauce (4) and marinate for 20 minutes.

7. When ribs are well seasoned with sauce preheat grill over hot charcoal. Cook marinated ribs on hot grill.

8. Cook green onion pieces and peppers alongside. Be careful not to marinate meat too long since it makes meat tough.
