BAKED PORK TENDERLOIN WITH MUSTARD
SAUCE
 

2 1/2-3 lb. pork tenderloin

MARINADE:

1/4 c. soy sauce
1/4 c. bourbon
2 tbsp. brown sugar

MUSTARD SAUCE:

1/3 c. sour cream
1/3 c. mayonnaise
1 tbsp. dry mustard
1 tbsp. finely chopped scallions
1 1/2 tsp. vinegar
Salt to taste

Marinate pork in marinade for several hours, turning the meat occasionally. Remove from marinade and bake at 325 degrees for 1 hour or until tender. Baste frequently with marinade. Carve into thin diagonal slices and serve with mustard sauce.

Mustard sauce: Mix together the 1st two ingredients; stir in next five ingredients.
