ZUCCHINI STUFFED WITH GROUND MEAT
 

4 med. zucchini
1 lg. onion, chopped
1 clove garlic, diced
4 tomatoes, peeled & chopped
1/2 c. green peppers, chopped
1 tbsp. oil
4-6 oz. cooked ground beef
3 slices bacon, fried crisp & crumbled
Salt & pepper
4 oz. light bread crumbs
4 oz. Parmesan or Cheddar, grated

Simmer zucchini in boiling, salted water about 12 minutes. Cut in half lengthwise, scoop out pulp and chop. Combine pulp, onion, garlic, tomatoes, green pepper, oil, meat and seasonings. Bake in 375 degree oven approximately 15 minutes.
