SPICY BEEF FILLING
 

1 lb. beef, cubed
2 tbsp. olive oil
1 large onion, chopped
1 tbsp. garlic, minced
1/2 teaspoon cumin, ground
1 can diced tomatoes with jalapenos
Pinch of cayenne pepper
salt and pepper to taste
1/4 teaspoon onion powder
1/2 beef bouillon cube or packet

Saute 1 in. cubes of beef in olive oil. When beef begins to brown, add onions, garlic, and continue cooking an additional 5 minutes.

Stir in tomatoes and seasonings. Bring to a boil, then reduce heat and simmer on low heat 10 minutes.

Use for filling tacos, burritos, tortillas, etc.

Variation: Add a can of black beans, kidney beans or refried beans, and taco seasoning to taste.

Stir in cubes of cheddar cheese or Monterey Jack until melted, and a spoonful or two of canned or pickled jalapenos.
