CAJUN STYLE ROASTER
 

Roaster chicken
1 tsp. softened butter
1 tsp. Worcestershire sauce
1/2 tsp. Tabasco sauce
Salt
Freshly ground pepper
1 sm. med. onion, halved
1 sm. bunch parsley
1 tsp. Worcestershire sauce
1/2 tsp. Tabasco sauce

Remove giblets and wash roaster inside and out; pat dry. Combine butter, Worcestershire sauce, and Tabasco sauce. Rub over roaster and inside cavity. Season with salt and pepper to taste. Place onion and parsley in cavity. Tie legs together and fold wings back. Bake at 350 degrees for 30 minutes per pound, basting occasionally with pan drippings. Remove roaster from pan. Skim fat from drippings, add Worcestershire sauce, and Tabasco to drippings; salt and pepper to taste. Serve sauce with roaster.
