FILLET OF HADDOCK PARISIENNE
 

2-4 haddock fillets
1-2 tsp. butter, softened
1 tsp. lemon juice
1 sliced lemon for garnish

PARISIENNE SAUCE:

1/2 c. mayonnaise
1 tbsp. lemon juice
1/4 c. Parmesan cheese

Combine while fish is being cooked.

Rinse haddock fillets in cold water, drain and dry on toweling. Cut fillets into serving size portions; place skin side down in baking dish. Place 3 inches from heat and broil 7-10 minutes, depending on thickness of fillets. Top each portion with 1-2 tablespoons Parisienne sauce. Broil 2-3 minutes or until sauce puffs and turns golden brown. Place fillets on serving plate; garnish with lemon slices.
