STIR-FRY NOODLES
 

1 pkg. long bean threads
1 pkg. dried mushrooms
Carrots, onions, and green onions
Teriyaki marinade and sauce
Left over chicken bits or pork bits
Sesame oil and regular vegetable oil

Soak the long bean threads (tiny clear oriental noodles) in water until soft. Soak the dried mushrooms in water until soft. Squeeze out the excess water when done. Slice the mushrooms thin.

Chop and grate the carrots, onions and green onion. Stir fry the vegetables in a little oil, with a dash of the sesame oil added for flavor. Add in the left over chicken or pork bits. Add the teriyaki marinade to taste (it can be a bit salty so only add a little at a time). Stir fry until coated. Add the long bean threads and mushrooms. Toss and stir until coated. The long bean threads can be cut into smaller lengths, if preferred.
