QUICHE
 

4 eggs
2 c. light cream
1/3 c. minced onion
1/2 tsp. salt; optional
2 c. any desired ingredients: usually 1 c. shredded Swiss cheese plus 1 c. ham, mushroom, crab meat, broccoli, spinach or bacon

Heat oven to 425 degrees. Prepare pastry in quiche dish or deep dish pie plate. Beat eggs until blended. Add cream, onion and salt. Place 2 cups of ingredients into pastry lined dish. Pour egg mixture into dish over ingredients. Bake 15 minutes at 450 degrees. Reduce oven temperature to 300 degrees. Bake 30 minutes longer or knife comes out clean. Let quiche stand 10 minutes before cutting.
