SPINACH MUSHROOM QUICHE
 

1 frozen deep dish pie crust
1 tbsp. Dijon mustard
2 pkg. frozen spinach, chopped
1 fresh garlic clove, chopped
1 tbsp. olive oil
1 c. shredded cheddar cheese
1/2 c. sliced fresh mushrooms
1 chopped shallot or med. onion
1/2 c. whipping cream
3 eggs
Fresh ground pepper
Seasoning salt
Grated Parmesan cheese
Paprika

Spread inside pie crust with mustard. Cook spinach; drain well. Saute garlic, shallots and mushrooms until tender in olive oil. Stir in spinach and cheese. Pour into pie shell. Mix eggs, whipping cream and seasonings well. Pour over quiche. Get liquid down in spinach. Sprinkle top with paprika and Parmesan. Bake in center of oven at 375 degrees for about 35 minutes, until crust is brown. Serves 6 or 8.
