FAST AND EASY CHEESY QUICHE
 

2 frozen deep dish 9 x 2 1/2 inch pie crusts in tins
1/2 lb. Cheddar cheese
3/4 lb. American cheese
1/2 lb. bacon
1 lg. ripe tomato
1/2 qt. half and half
4 eggs
2 tsp. pepper
2 tbsp. tarragon

Slice cheeses in lengthwise pieces. Cook bacon until crispy. Dice tomatoes into small pieces. Mix cream and eggs together, add tarragon and pepper. Put crushed bacon across bottom of each pie crust. Layer in tomato dices. Cover with both cheeses in each crust. Pour egg and cream mixture over cheeses to cover but not to come to top of pie crust.

Bake in oven at 350 degrees for about 40 minutes until top is golden brown. Remove from heat and let stand and cool 15 minutes before serving.

Tomatoes and bacon can be substituted with ham, spinach or broccoli.
