SPINACH FLAN
 

2 lbs. spinach
1 qt. heavy cream
8 eggs
5 mushrooms
1/2 onion
1/2 red pepper (pimento)
8 slices bacon
Salt and pepper

Cut bacon in pieces. Cut onion and red pepper in pieces. Cut mushroom in pieces. Clean and boil spinach, do not overcook. Drain and squeeze water out very well. Saute in a little olive oil the onion, red pepper, bacon, spinach and mushrooms, about 15 minutes. Blend it well in an electric blender. Then add to it the eggs and heavy cream and blend again. Add salt and pepper to taste. Remember salt will intensify after cooking.

Butter your mold and put mixture in it. Bake in a pan with hot water at 200 F. for 55 minutes. When cooked it should have the consistency of flan. Test with a knife and it should come out clean.

BLACK OLIVE SAUCE:

2 cans black olives, pitted
1/4 onion, chopped
1/4 red pimento, chopped
Salt and white wine

In frying pan, put olives (juice and all). Add onion, pimento and simmer 15 minutes. Should it start to dry up add a little water. Blend in blender and add a little salt and white wine. Strain it and serve it over the flan.

To serve flan, cut in individual slices and put a little sauce over it.
