EMPANADAS (PANAMA)
 

2 c. flour
1/2 c. shortening
1 tsp. salt
6 - 7 tbsp. water
1 lb. minced meat
1 - 2 slices onion, chopped
1/2 green pepper
1 hard boiled egg
1 boiled potato
1 tbsp. tomato paste
Garlic
Salt
Pepper

Sift flour and salt. Cut shortening to small pieces. Sprinkle water - 1 tablespoon at a time. Cut dough into small balls and flatten on floured surface. Add one teaspoon meat, potato, egg, onion and pepper mixture; fold flour over it and enclose it. Cut off excess flour and crimp edge with a fork. Bake at 350 degrees for 15 minutes.

FRIED EMPANADAS:

2 1/2 c. flour
1/2 c. butter
2 tsp. baking powder
1 tsp. salt
6 - 7 tbsp. water

Fill as above and fry until brown.
