1 (10 oz.) pkg. frozen or fresh broccoli, cooked and drained
1 Bermuda onion, thinly sliced
2 lg. tomatoes, thinly sliced
3 whole chicken breasts, boned, halved and skinned
Salt and pepper to taste
1 (6 oz.) can mushrooms, drained
2 1/2 c. sharp grated Cheddar cheese
1/4 c. sherry (optional)
1/2 lb. bacon strips cooked and drained
Cover the bottom of a deep, 2 1/2 quart casserole with broccoli.
Layer remaining ingredients over broccoli as follows: onion slices, 1/2 of the tomato slices, chicken breasts, salt and pepper, mushrooms, 1/2 of the tomato slices, bacon, cheese and sherry.
Cover casserole with foil and bake. Remove foil, reduce temperature and bake until done.
Temperature: 450 degrees
Bake: 45 minutes, then reduce temperature to 375 degrees and bake for 45 minutes.
