FINE CUT CHOP SUEY OR CHOW MEIN
 

1/4 c. butter or shortening
1 1/2 c. (3/4 lb.) lean pork, veal, or beef, cut in thin strips
1 c. onions, cut fine
1 tsp. salt
1/16 tsp. pepper
2 c. celery, finely cut
1 1/2 c. hot water
1 c. bean sprouts

Or water chestnuts, mushrooms, sliced peppers, can of Chinese vegetables.

Melt butter in skillet. Add meat, stir and sear quickly. Add onions, fry for 5 minutes. Add celery, salt, pepper, and water. Cover and cook for 5 minutes. Add drained vegetables. Mix thoroughly and heat to boiling point.

Combine and add flavoring and thickening ingredients. Stir lightly and cook 1 minute. Serve with chow mein noodles or rice.

FLAVORING AND THICKENING:

2 tbsp. cold water
2 tbsp. cornstarch
2 tsp. soy sauce
1 tsp. sugar
1 tbsp. LaChoy brown gravy sauce
