1 unbaked pie shell 1 (10 oz.) pkg. frozen spinach, chopped, thawed & drained 1 med. onion, chopped 1/2 stick butter 1 lb. cottage cheese 3 eggs 3 tbsp. flour 2 oz. shredded Cheddar cheese 1/8 tsp. nutmeg Salt Pepper Cayenne pepper Saute onion in butter. Mix well with other ingredients. Spread in unbaked pie shell. Bake at 350 degrees for 35 minutes until a knife inserted in center comes out clean. Can be frozen and reheated. I bake the pie shell at 425 degrees for about 5 minutes before filling to keep it nice and flaky. |
