3 1/2 c. cooked wild rice 1/2 c. chopped onion 1/4 c. butter 1/2 tsp. salt and pepper 1/2 tsp. thyme 1/2 tsp. nutmeg 1/8 tsp. cloves 2 tbsp. parsley 1/2 c. chopped celery 1 c. dried apricots 4 cornish hens Cook onion in butter, add seasonings. Fold in celery, rice and apricots. Salt and pepper hen cavity, stuff hen and seal with toothpick. Cook hens 1 1/2 hours at 350 degrees basting every 1/2 hour with sauce. SAUCE: 3 tbsp. flour 4 tbsp. butter Melt butter and stir in flour. Add remaining ingredients. Salt and pepper 1 c. orange juice 1/2 c. orange marmalade 1/3 c. Grand Marnier or Amaretto |
