BAKED SCALLOPS/OR SCROD SUPREME
 

1 lb. scallops or scrod
1/2 c. butter
1 c. bread crumbs
1 tsp. minced onion
1 tsp. parsley flakes
1/4 tsp. tarragon (crumbled)
1/8 tsp. pepper
2 tsp. lemon juice

Make bread crumbs in blender using Purity's sesame rolls - set aside. Melt butter in skillet. Add onion, parsley, tarragon, pepper and lemon juice. Simmer 5 minutes. Add enough butter mixture to bread crumbs to moisten. Arrange scallops or scrod in baking dish - spoon remaining butter mixture over scallops/scrod and top with moistened bread crumbs. Bake at 500 degrees for 5 to 8 minutes.

NOTE: To be "Heart Smart" substitute a combination of Promise extra light butter and olive oil or peanut oil for regular butter and be sure to use Purity bread.
